A fresh gajra bought at eight in the morning is past its best by about four in the afternoon. An Indian wedding function runs eleven hours. Those two numbers are the entire reason this page exists.

What goes wrong with fresh, function by function

• Haldi. Turmeric, oil and water. Fresh petals bruise brown on contact and the marigolds stain. Nothing survives haldi looking the way it started.
• Mehendi. The longest sitting of the whole wedding, and the one where hands are occupied for hours. Whatever is in the hair at the start is what is there at the end, because nobody can fix it.
• The wedding itself. Lights, crowd, heat. Fresh gajra in a hot hall is on a clock from the moment it leaves the fridge.
• The photographs. The group shots happen late, and that is when wilt shows up on camera — a slightly grey edge on every white flower.
